Pork Schnitzel

Wiener Schnitzel is a traditional Austrian dish that is quite popular in Germany. When my husband and I were there last summer, we had some wonderful Schnitzel and while I've made it with veal before, Pork Schnitzel is a much quicker and more affordable meal.

Ingredients:
1/4 cup flour (can be whole wheat)
1 tsp salt and 1/2 tsp pepper
1/2 cup Panko flakes or bread crumbs
1 egg
2 pork thin slices of pork (or if you have a meat tenderizer you can pound them yourself)
frying oil
2 tbsp chopped parsley
lemon wedges

Directions:
If necessary, pound the pork until it is about 1/4 inch thick
Season with some salt, pepper, cumin, garlic and oregano (whichever combination of flavors you like. You can also use something like Adobo All Purpose Seasoning)
Mix flour, salt & pepper in a shallow bowl
Place Panko in a bowl
Lightly beat the egg in another bowl
Place cutlets in flour one at a time, turning to coat and shaking off excess
Next dip in the egg, turning to coat and letting excess drip back into the bowl
Last place in the Panko making sure to coat completely coat them with a thin layer of crumbs
Heat 1/4 inch of oil in a large skillet over medium heat
When oil is hot, cook cutlets until golden brown (about 2 1/2 min) on each side
If you're cutlets are thicker than 1/4 inch, make sure to cook them longer on each side
Serve sprinkled with chopped parsley and some lemon wegdes
