I have to give credit to my husband for this recipe, because while I'm in charge of prepping the fries and salad, he prepares the fish and mans the grill.
Ingredients:
1-2 sweet potatoes (or any other type of potato)
1 tbsp olive oil
Sea salt
Rosemary leaves (dry or fresh)
2 fish fillets (we used some blue fish we caught at the beach)
1 tbsp olive oil
Rub: Salt, pepper, paprika powder, garlic powder, onion powder powder and red chili flakes
Directions:
Wash the potatoes
Slice and place on a baking sheet
Brush on olive oil
Sprinkle with sea salt and rosemary
Grill until tender, stirring a few times
(You can leave them alone at first, but after ~5 min, make sure to watch 'em closely so they don't burn!)
Clean the fillets
Brush with olive oil
Sprinkle with your spice rub
Grill for a few minutes
Serve with a side salad with some home-made vinaigrette (equal parts of red wine vinegar, olive oil, dash of lemon juice and some agave nectar) for a simple delicious meal
