Omelette

There are so many ways to make an omelette
and even more ways to keep it local and organic!

Ingredients:
1 tbsp butter
3 eggs
3 tbsp cup milk
3 tbsp shredded cheese
Salt & Pepper

Directions:
Whisk eggs, milk, cheese salt and pepper in a bowl
Heat butter in pan on medium heat
Add eggs to pan tilting the pan to spread the eggs evenly
As eggs set, lift edges of omelette with spatula as you tilt the pan
to let uncooked egg run underneath
*Add filling*
Cook until bottom is golden brown and top is still a little moist
Fold omelette in half and slide onto a plate


Filling:
1. Cheese & bacon - shred the cheese, fry the bacon and chop into small pieces
2. Cheese & Tomato - shred the cheese, chop the tomato
3. Goat cheese & Herbs - crumble the goat cheese, snip the herbs
4. Vegetables - use any veggies you want. For certain veggies, you may want to cook the veggies in a separate pan with some olive oil for a few minutes. You can also opt for a Frittata when adding veggies. The Frittata is a little thicker and instead of adding the eggs and then the filling, you cook the filling, then add the eggs. Use 4-6 eggs to make the Frittata and instead of folding it over to serve, cut it in wedges or squares for serving.
